yum, yum: peaches

peaches, lovely on their own, but in this cobbler--shaZAam! try it out, so buttery, sugary and delicious:

pre-heat oven 375 degrees

6-8 peaches, peeled and sliced
2tbs butter
1/2c sugar (1c if you don't have the sweetest peaches, this year's are stupendous!)
pinch cinnamon
pinch salt
--place 3-5c sliced peaches in  a skillet over medium heat with 1/2c sugar for 10-15 min. add two tbs butter, cinnamon and pinch of salt. place cooked peaches in 8x12 baking dish with some juice (but not enough to boil over if the dish is shallow; i added all of the juice to a baking dish with 3 inch sides with no subsequent spills). place aluminum foil under pan to catch spills while cooking. 

for crust:
1 egg
1c self rising flour
1c sugar
6tbs butter
--mix one egg, flour and sugar till lumpy. melt 6tbs butter. sprinkle lumpy batter over peaches in pan, then pour butter on top 

bake for 30 minutes then pour any extra juice over top; this cobbler soars with vanilla ice cream!
